Brown Butter Sauce

This sauce is very quick to make and I like it because I always have butter in the fridge and a sage plant on my back porch. I used this sauce to coat some Trader Joe's pumpkin honey ravioli (photo).  I have also used it on plain or sweet potato gnocchi.  

1 stick (8 tablespoons) of butter, salted
2 tablespoons of sage, finely chopped
1 teaspoon salt
1 teaspoon pepper

Put the stick of butter in a heavy bottomed sauce pan over medium heat.  Allow the butter to melt and stir occasionally until it begins to become a very light amber color (about 5 minutes).  Add the sage, salt and pepper and continue to stir.  Remove from heat when the butter is amber brown.  NOTE:  it is easy to burn the butter so keep a close eye and remove from the heat when it turns amber.  If the butter looks darker than amber it has gone too far and will probably not taste too good!
