Fish with Coconut Sauce

This sauce tastes great over any sort of white fish but last night I put it over tuna steaks and some white rice which worked well too.  You can control the spice by the amount of serrano chile you add.  I added 1/3 of the pepper (seeded) and it was a medium spicy sauce.

1 1/2 cup unsweetened lite coconut milk
Juice from 2 limes
4 teaspoons fresh ginger, peeled and minced
2 garlic cloves, minced
1 teaspoon fish sauce
1 to 2 teaspoons serrano chile, minced and seeded
1/4 cup fresh cilantro, chopped
Put all ingredients except cilantro into a small sauce pan and bring to a low boil.  Reduce heat to low until sauce thickens (~10 minutes).  Stir in the cilantro and pour over fish.  (note: I just cook the fish as usual with some salt and pepper)
